FRIED SHEESY MASH

The melty mashup you never knew you needed. Soft, fluffy & Sheesy mash shallow fried to create a crispy outer crunch.

 

Ingredients

  • 1kg Potatoes (peeled & diced)
  • 2 Tbsp Cornflour
  • 50g Sheese Grated Cheddar
  • Oil for frying
  • Salt
     
  • Directions

    1. Add potatoes into a large saucepan with cold water & a few pinches of salt
    2. Bring to the boil and simmer for 15mins before draining
    3. In a large bowl mash the potato completely & mix in the cornflour
    4. Shape the the potato mixture into an even amount of discs.
    5. Take one, layer a handful of grated Sheese over it, before placing another disc on on top & pressing the sides together sealing the Sheese in
    6. In a heavy based pan, pour in the oil to around 1cm deep & heat to 185C
    7. In batches to avoid overcrowding, add the discs to the oil & fry for 5mins or until the bottom side is golden brown. Flip & cook for another 5mins
    8. Serve with flaky salt & chopped chives
