SPICY BEAN QUESADILLA

A Mexican inspired dish that's packed full of flavour. These Spicy Bean Quesadilla's are delicious & quick to make.

 

Ingredients

  • 1 tablespoon olive oil
  • 1 yellow onion (diced)
  • 1 Red Bell Pepper (cut into strips)
  • 1 tbsp Cumin
  • 1 tsp Paprika
  • 1/2 tsp garlic powder
  • 1/2 tin black beans
  • 50g Sheese Grated Mozzarella Flavour
  • 4 slices Sheese Red Leicester Flavour
  • 2 flour tortillas 
  • Directions

    1. Heat the oil in a skillet on a medium heat & sauté onions for 5 minutes until soft.

    2. Add the cumin, paprika and garlic powder and fry for a further minute.

    3. Stir in black beans and fry for 2-3 minutes, add grated Mozzarella flavour Sheese and stir until melted.

    4.  In a large separate plan, place a tortilla and set heat to medium.

    5. Spoon in half the bean mixture onto one side of the tortilla, followed by the red pepper and a couple of slices of Red Leicester flavour slices (or more grated mozzarella if you prefer!).

    6. Fold over the tortilla and flip and cook for a further 2 minutes. Repeat with the second tortilla.

    7. Cut in half to serve
